Starch, on the other hand, is composed of both amylose (a linear chain of α-glucose) and amylopectin (a branched form of α-glucose). The α-1,4-glycosidic bonds in starch enable it to take on a more compact and dynamic structure, making it an ideal energy storage polysaccharide for plants. While cellulose serves a structural role, starch acts as a reservoir of energy that plants can draw on during periods of growth or in times of need.

In various applications, researchers have sought ways to modify cellulose to enhance its solubility. For instance, carboxymethyl cellulose (CMC) is a modified cellulose that is soluble in water and widely used as a thickening agent in food, cosmetics, and pharmaceuticals.


As a modified cellulose, HPMC has excellent thickening, bonding and water retention properties. When added to mortar, it can significantly improve the operability of the mortar, extend the construction time, reduce vertical slippage, and provide better working conditions for construction workers. In addition, the use of HPMC can effectively reduce the evaporation of water during the construction process of the mortar and improve the strength and durability of the mortar.

Beyond food and pharmaceuticals, MCC finds applications in the cosmetic and personal care industry as well. It acts as a thickening agent in lotions, creams, and shampoos, enhancing the product's texture and performance. The stability and emulsifying properties of MCC also facilitate the creation of well-formulated cosmetic products that provide users with a luxurious feel.
